Ingredients
- 12 Medjool dates
- 1 cup gluten free rolled oats
- ½ cup raw almonds
- 1 tablespoon chai seeds
- 1/2 lemon, washed, and seeds removed
- 1 teaspoon vanilla extract
- 1 teaspoon turmeric powder
- Optional coating: ½ cup almond flour or shredded un-sweetened coconut
Instructions
- Remove the pits from dates and soak them in hot water for several minutes. When the dates are softened, drain, saving the water just in case, and place them in a food processor.
- Add the other ingredients to the food processor and blend until mixture turns into a dough-like consistency. Add 1 or 2 tablespoons of saved date water if the mixture is too dry.
- Roll into balls, then roll the balls in almond flour or shredded coconut.
- Store energy balls in an airtight container in the refrigerator until serving.
- Notes- Yes, you’ll add the entire 1/2 of a lemon to the food processor with the other ingredients. It only takes about 10 minutes to make them, and when stored in the refrigerator, they keep for up to 2 weeks.
